A flour production site, the Moulin des Gourmands is the only windmill to have been grinding flour using a flint millstone in the traditional way in the canton of Saint Gilles Croix de Vie since 1842.

The flours are produced by hand and bagged by the millers.
The flour is made from top-quality wheat grown at Domaine de Bacqueville in L'Aiguillon sur Vie, 5 km from the mill. The flour is 100% local to St Gilles Croix de Vie.

The method of crushing the wheat using a flint millstone produces a flour that is richer in vitamins, minerals, iron, phosphorus and fibre.

The Moulin des Gourmands produces wheat flour (soft wheat), buckwheat flour (dark wheat) and small spelt flour.

Each flour has its own use:
- Wheat flour: semi-complete flour (T80) for making cakes, pancakes, brown bread and pie shells
wholemeal flour (T150) for making wholemeal bread, pancakes and biscuits.
- Buckwheat flour for making buckwheat pancakes or Breton biscuits.
- Small spelt flour for making bread, biscuits and cakes.

Our flours are available in 500g, 1kg and 5kg packs, so you can make sweet and savoury dishes all year round.
